The sparkling types such as the champagne includes a secondary fermentation that would take place after it is bottled.

Fermenting the sweet type happens before the sugar is converted into ethanol. Fermenting this is done through chilling, sulphur, and adding additives to remove yeast and bacteria. The sugar concentration is also increased.
